Easy Morning Kale Omlette

Hi everyone, its been a while since my last post in the summer but I wanted to get back into the blogging swing with posting a few healthy meals I have come up with over the last month. Since my last post I made even more changes in my healthy eating lifestyle and became full paleo. 
I started to eat paleo around October last year but fell out of my routine over Christmas. But that has passed now and I just finished a Paleo Challenge called The Whole 30 where you eliminate certain foods from your diet and after the 30 days reintroduce some of them back.

Its been an fantastic experience and I will tell you more about it in the upcoming posts. For now I just wanted to show you what my everyday kind of breakfast looks like. Its super easy and only takes 10 min to make.What better way to start the day with some kale!



All you need is

2 eggs
one half of an onion
small bunch of kale
salt & pepper
some coconut oil for frying

Make it!!!

1. Slice the onion into rings and tear the kale into small chunks. Start frying them with some coconut      oil until soft 
2. Beat the 2 eggs in a small bowl and season with salt and pepper
3. Add  egg to  pan and fry until the egg has set and forms an omelette ( I like to put mine in the grill so it gets fluffy and brown on the top) 
4. Serve with a nice hot tea in the morning for a lovely start into a new day!
